These are really more like little brownie bites. They are soo soo good.
Chocolate Caramel Thumbprints
1/2 cup butter, softened
2/3 cup sugar
1 egg, separated
2 tbsp milk
1 tsp vanilla
1 cup all purpose flour
1/3 cup cocoa
1 cup finely chopped pecans
Filling:
12 to 14 caramels
3 tbsp whipping cream
1/2 cup sweetened chocolate chips
1 tsp shortening
Cream butter and sugar. Beat in egg yolk, milk, and vanilla. Combine flour, cocoa, and salt, add to the creamed mixture. Chill dough.
Roll into 1 in balls. Beat egg whites. Dip ball into egg white and roll in pecans. Place 2 inches apart on greased cookie sheet. Make a little well in the middle of the balls with the end of a wooden spoon. Do not go all the way through the cookies. Bake at 350 for 10-12 minutes.
While cookies are baking, melt caramels with cream over med heat. Melt the chocolate chips and shortening in the microwave. When cookies are done,(you may have to deepen your wells a little after baking) pour about 1/2 tsp of the caramels into the wells and drizzle the chocolate over the top. These are so delicious. It makes about 30 cookies.
Have you ever made snowballs? They are a combination of oreos (double stuff) cream cheese mixed together and then dipped in white chocolate. You can't eat just one. This is the first year I've tried these and I definitely plan to make them again. Hope things go well on the 29th.

Today was a all-dayer in the kitchen. We all have our favorites that we like at this time of the year, so now we have two bowls full of peanut brittle, a pan of peanut butter fudge, a bowl of wedding cookies, a container of chocolate caramel thumbprints (possibly the best cookies in the world) and a bag of almond bark covered pretzels. We also made pressed cookies with white chocolate on the bottoms. We mixed green sugar crystals and peppermints crystals in the batter. Making the peanut brittle and fudge is good for me because both of those its all in the timing and you have to be so patient. Which I need to work on. I have I think four more gifts to wrap and then I am done. The kids like their gifts to all have ribbons on them as well,so that takes a little extra time. But it is fun coming up with the cool combinations. And I have to say the $5 I spent on the scotch wrapping paper cutter thingy was well spent. It is a cool little do dad. If they go on sale after Christmas I may get another one or two to save up. Tomorrow we head to Memphis for a showing of Suessical the Musical. I hope Kelsey feels well for it. We had free tickets to the Memphis Grizzlies game last Friday night that she didn't feel well enough to go, so Simon and the other two kids went with a dad and son from Northside. I hope we make this one tomorrow.
except for the chocolate caramel thumbprint cookies-I've made all the stuff you have. Those are all some of my favorites! Those cookies sound good-I've never heard of them. Do you make your peanut brittle in the microwave? I've done it both ways and decided I liked the microwave recipe the best.
We have had freezing rain for several hours and it is still coming through. We have a layer of ice on everything in the back yard. I can't tell what the roads are like. We had an indoors day today. We played games-Wii, canasta, settlers of catan. Kelsey didn't feel real great today. She, Simon David, and I did get to play Scrabble this morning and Kelsey won. I give her kudos for getting a seven letter word for a 50 point bonus!! Simon David only finished two points behind me. About done with Christmas shopping, still have Simon to finish and some of my nieces and nephews. If you like Catan, there is an online game. Google Catan World online. You have to register and download the game, but it is really fun. If you have a mac like us, mute the sound, because they have a glitch that causes the mac game to crash occasionally if the sound is on. I am coolmom23 if anyone joins. Let me know who you are so maybe we can play.
I just sat down here to look at the weather (we are due for it in a couple of hours) and thought of you when I saw Jonesboro right in the middle of it. We are hoping for an "indoors day" tomorrow!
Hi Teresa. I actually thought about you and another fellow homeschoole that lives near Little Rock. I was not wanting to spend the night there on the side of the road because of ice! ha It was a bit stressful at times, but could have been much worse! Thanks for you concern!

Puppy chow is just crispix (we use the generic kind) with melted chocolate chips, peanut butter, butter, and vanilla poured over it so it coats it all. When that cools you stir in powdered sugar until it is all white. It's very yummy and super easy!

We had a great couple of days with our family. Ruth, Larry, Lehia, Marshall, and Jordan arrived Wednesday evening in time for supper before Bible study and they left this morning. We enjoyed our time. Kelsey felt pretty good Thursday, but pretty rough yesterday. We went to do a little shopping and then the girls (sans Faith) went to see Twilight again while the guys (plus Faith) came back to the house. We played Settlers of Catan, Jordan is now addicted! and Tick and Shanghai Rummy. Settlers and Shanghai rummy are two of my favorite games. We exchanged gifts last night, since we will be unable to travel back home for a while. Simon David received the Clone Wars movie, so we watched that this morning. We ate lots of food!!! We have enough to have left overs tonight. We introduced Jordan to amish friendship bread and he took some starter home for his mom. We are thankful for our family and the opportunity we had to be together. My folks are coming next weekend. My mom and I, plus some other folks from Northside, are going to walk in the St Jude 5K on Saturday. Kelsey, Simon, and Faith, with their 4-H club, have been raising money as many of you know to buy gifts for the kids at St Jude. We will deliver them on Saturday as well.
Sounds like you had a very nice Thanksgiving. =) I like Settlers too. We might have played it last Wednesday with our Uncle Darrell and his family, but we had too many people. =)
